Food: Puff pastry with lemon cream and fruit

Looking for a summery, fruity, yummy but above all easy-to-make dessert? Then might I suggest you to read on as I have the perfect recipe for you 🙂

Ingredients to serve 8:

pastry: 500 gr puff pastry (2 packs of 250 gram), 6 tablespoons of icing sugar

fruit filling: 250 grams of strawberries, 4 small nectarines, 6 tablespoons of white sugar, 6 tablespoons of water, 2 tablespoons of freshly squeezed lemon juice – you can of course use other fruit as well, depending on the season

lemon cream: 1 lemon, 120 grams of icing sugar, 1 teaspoon of vanilla sugar and 600 ml cream

  • pastry:
    • preheat the oven at the temperature suggested on the puff pastry package
    • cut each sheet of puff pastry into 8 triangles (so you’ve got 16 triangles in total)
    • puncture the pastry with a fork and sprinkle over the icing sugar
    • put into the oven as said on the package (usually about 12-20 minutes depending on your oven)
    • take it out of the oven and let it cool down

  • fruit filling:
    • cut the strawberries and nectarines (or other fruit) in even parts
    • put the sugar, water and lemon juice in a pan and bring to the boil
    • once this mixture is boiling, add the fruit and let it warm through
    • let the fruit mixture cool down (leave the lid on the pan)
  • lemon cream:
    • grate the peel of the lemon and squeeze all juice out of it
    • put the lemon zest and juice together with the cream and whisk until firm

You can make all of the above beforehand, but wait to assemble the dessert just before serving it.

  • assemble the dessert:
    • put a piece of puff pastry on a plate, spread with lemon cream and put some fruit on top, then put some cream on top and put in a piece of puff pastry
    • drizzle some of the sugarsirop on top

Doesn’t this dessert look fabulous?! And you know what… it tastes as good as it looks 🙂
